Maurizio Serva is the owner and chef of the two-star restaurant The Trout. Together with his brother Sandro they personally run tables and kitchen for more than 20 years, making the small restaurant a real benchmark for many gastronomic gourmets.
The search of the best products, traditional modernized dishes, local signature… these are the cooking basis of the Servant brothers that reinvent and concentrate flavors ingrained in our memory, playing with textures and temperature, always attending to the lightness and balance of preparations.
